Working from home today, I don’t have that much time to cook proper lunch. Enter the super simple noodle soup. Carrots, celery, parsley, a bit of black pepper. Cut one onion into halves, roast for some 10 min in the dry pot, then add all the vegetables, add one litre of water, salt, and one vegetable stock cube, boil for 45 min. Filter the soup, take out the carrots, throw all the other vegetables away. Cut carrots into pieces, add some quality pasta, and cook for another few minutes. Quite a lovely soup that will even warm you up in those cold winter days. And quite a healthy lunch, too. I guess it would work quite well without the stock cube, maybe use a wider variety of vegetables and some extras instead.
